Description

If you don’t like kale because it’s tough, this is the perfect salad for you. I take Italian kale also known as Lacinato, and shred it very thinly. Topped with tart dried cherries,  honey crisp apples, pine nuts and shredded (or grilled) chicken, this salad is a favorite for many of my clients. The dressing is an apple cider vinaigrette.

Instructions
  1. Grill your chicken and set aside to cool. After cooled, slice into desired bite size pieces.
  2. Remove the spine from the kale and pat dry. Thinly slice and place in a bowl. Core the apple and slice to desired bit size pieces, add to the kale.
  3. Add the chicken, pine nuts and cherries on top and dress.
  4. Dressing; Measure the apple cider vinegar into a glass measuring cup, add the coconut sugar and pepper and let stand 2-5 minutes to melt the sugar. Mix in the avocado oil and serve.
